what kind (if any) of open source licenses are applicable to a RB
project containing some encrypted classes and modules?

None.

Either the app is open source, or it is not.

What you could do is to set a BSD license, that means everyone can do
whatever they want with your code.

Also there is a thing called Public Domain.
