Very general question:

I've spent much of the last month working on a program to grab video (animal behavior) and analyze frames on the fly.

I've used the MBS Quicktime plugin and I'm principally targeting Mac OS (non-cocoa).

I'm looking for an overview of the differences between quicktime and QTkit; the rate of deprecation of quicktime functions; the scope of each plug in; and the advantages and disadvantages of each.

I know this is a broad and general question, but I'm likely to begin a transition to QTkit, and would like to understand it better.

QuickTime is very old API. Won't be available on 64 bit targets.
QTKit is newer API and will be available on 64 bit.
The long run seems we go to AVFoundation. But I didn't start for that plugin.

But all three are not feature equal.

Well, there is no general recommendation. Simply write your app with the API which has the features you need.
